La condición relacional del terroir simbiótico

El paradigma clásico del terroir, fundamentado en el determinismo geográfico y la estabilidad climática, muestra signos de agotamiento frente al giro microbiológico y la crisis ambiental contemporánea. Este artículo propone el concepto de ‘terroir simbiótico’: un marco fundamentado en una ontología relacional que desplaza el foco desde el ‘lugar fijo’ hacia el ‘ensamblaje multiespecie’. A través de una genealogía crítica de los dispositivos institucionales y un análisis de la evidencia metagenómica reciente, argumentamos que el vino no es una expresión estática del suelo, sino un holobionte coproducido por las interacciones dinámicas entre la vid, la microbiota, los humanos y las tecnologías. Lejos de un mero reduccionismo biológico, esta propuesta articula una política del cuidado, la justicia epistémica y una gobernanza adaptativa, entendiendo la tipicidad como un logro relacional situado y no como una esencia inmutable.

Francisco Javier Serrano Bosquet, Tecnológico de Monterrey

Doctor en Filosofía por la Universidad Complutense de Madrid (España) y Profesor Investigador en la Escuela de Humanidades y Educación del Tecnológico de Monterrey (México). Miembro del Sistema Nacional de Investigadores (SNI). Sus líneas de investigación se centran en la filosofía de la ciencia y la tecnología, la bioética y los estudios sociales de la ciencia (CTS), con un interés particular en las implicaciones ontológicas y éticas de la biotecnología y los sistemas agroalimentarios. Ha publicado extensamente sobre ética, historia y filosofía de la biología y la agronomía en revistas indexadas internacionales. Como socio fundador de la Asociación de Viticultores de Nuevo León (AVNL), articula su investigación filosófica con la práctica vitivinícola situada.
